Perfect Spinach Walnut Pesto

My husband and I just love our pesto. We will buy it at CostCo. every now and then; but nothing beats our favorite homemade recipe. You can substitute any nut in the recipe, we love almonds as well – but you can also use original pine nuts or pistachios.

What You Will Need:

basil leaves, 2 cups
spinach leaves, 6 cups
garlic cloves, 8-10 whole
walnuts, toasted, 1 heaping cup
parm cheese, 2/3 cup
lemon zest, 1 teaspoon
lemon juice, 1 lemon
olive oil, until pesto is smooth
salt & pepper, to taste

1. This recipe is really easy. Toast the nuts in a pan, usually until you can smell them.

Toss the nuts a few times to toast evenly.

2. Put everything in food processor.

3. Pour in olive oil while blending until smooth. This will…

…turn into this!

4. Put it on everything! Pasta, grilled cheese, vegetables…it’s great on just about anything.

Super Easy Mini Handpies

Make these on the fly when you have guests over or if you want a simple, sweet treat at the end of your day!

What You Will Need:

pie crust
blueberries (or other fruit)

1. Roll out your dough.

2. Fill it with applesauce and your favorite fruit. Fold it over and bake it in your oven at 400 degrees.

3. Cook until golden brown and caramelized!

These are not the prettiest, ’cause I really did make them on the fly. But with a little TLC – these puppies would be precious and classy to serve at a party.

Black Bean & Sweet Potato Tarts

These are so cute and so easy! The flavors mesh so well and are heavenly together.

What You Will Need:

pie crust (I made mine in the food processor)
black beans, 1 can drained and rinsed
sweet potato, 1 cup cubed and soft (you can do this in the microwave)
peppers, roasted red & fresh green, chopped
onion, 1/4 cup finely chopped
cilantro, 1 tablespoon
cumin, 1/2 tablespoon
chili powder, 1/2 tablespoon
hot sauce, a hefty squeeze
garlic powder, 1 tablespoon
olives, 1/4 cup whole, then sliced
salt & pepper

1. In a bowl, heat the sweet potato until soft. Add all the ingredients except pie crust and mash with the back of a fork or potato masher until slightly mixed.

2. Roll out pie crust, and using a knife cut squares. Place them in muffin liners.

3. Fill the crusts and fold the corners in.

4. Cut extra pie crust into ribbons to make a crosshair on the top of each tart.

5. Bake in 400 degree oven until golden brown, about 20 to 30 minutes. Serve with cheese and my favorite sauce, 2 tablespoons ranch dressing + 1/2 tablespoon saracha hot sauce. Spicy and creamy on top!

A hearty meal and so adorable!

Super Easy Rose Pasta Sauce

Tired of the old pasta and red sauce? Mix up your weeknight meal with this really easy variation. Rose sauce!

I started my new job today and I am so excited to get into it. But my brain is also exhausted and ready for a nap. We are headed out to go bowling in just a bit too, so this is fast dinner that anyone would enjoy! I made mine with some veggies (my favorite) to “beef” up the meal. But it would be good alone on some pasta, or even with some chicken or shrimp. Skies the limit!

What you will need:

garlic, 2 cloves diced
your favorite red sauce (about 2/3 of jar for 1/2 pound of pasta)
fat free half-and-half (about 1/4 cup)
salt & pepper
parm cheese, finely grated (optional for topping)

1. In the pan you just drained your cooked noodle from, put a smidgen of oil in and cook the rawness out of the garlic.

2. Throw in the red sauce.

3. Hit it with some fat free half-and-half to give it a nice “rose” color.

4. A bit of salt & pepper. Mix it all together, and you have yourself a classy dinner!

So fast and easy! And it tastes so delicious.

Roasted Sweet Potatoes & Brussel Sprouts

This is a really easy, really delicious side-dish.

What You Will Need:

sweet potato, 1 medium chopped
brussel sprouts, 1/2 pound, cut in half
chili powder, 1 teaspoon
garlic powder, 1 teaspoon
salt & pepper
oil, to coat

1. Put all the veggies in a bowl with the seasonings and oil. Toss to coat.

2. Place on baking sheet.

3. Put in a 400 degree oven and cook until crispy, golden, and cooked to perfection.

Super healthy and full of flavor. A perfect side dish to almost any meal!
