Refrigerator Pickles

Cucumber season! This means one thing – refrigerator pickles.  My husband loves dill pickles, so this simple recipe is right up his alley. They take no time to make, and with time the flavors meld. I have found that the flavors begin to taste their best after 24 hours, with the pickles lasting up to two weeks in the fridge. Awesome! This will be my new side dish for the next two weeks. Get ready hunny, we are having refrigerator pickles with every meal!

What you will need:

Fresh Cucumbers ( about 4-6 cups), thinly sliced
1 small onion, thinly sliced
1 carrot, thinly sliced
½ cup apple cider vinegar
½ cup white vinegar
2 Tbsp salt
1 tsp dried dill
4 Tbsp white sugar


Slice cucumbers, onion and carrots and layer into a glass dish.

Combine the vinegars, salt, dill and sugar. Stir until the sugar is dissolved.


Toss with the layered cucumbers. As easy as 1-2-3, pickles are ready to marinade! Place in the refrigerator for up to two weeks.


Thanks to my friend for the wonderful garden fresh cucumbers! I think that adding some whole garlic cloves could do nothing but add another level of flavor. Mental note – next time, power up with some garlic.
